- 2 tablespoons olive oil
- salt and pepper to taste

- In a cast iron skillet, heat the olive oil over medium-high heat. Ensure the oil is hot but not smoking.
- Once the oil is hot, carefully pour the sourdough discard into the pan. Use a spatula to spread it out evenly, creating a thin layer.

- Allow the bottom to cook until golden brown (approximately 3-4 minutes) before flipping it over. Cook the other side until it reaches the same delicious hue.
