Sourdough Discard Peach Cobbler
A delicious summer treat, anytime of the year! Combine your excess sourdough discard to make this sweet and tangy combination!

For the Cobbler:
- 1/4 cup cane sugar
- 1/4 cup brown sugar
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 2 teaspoons arrowroot powder or cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 quarts sliced peaches or approximately 2 pounds of peaches, peeled and sliced
For the Topping:
- 1/2 cup all-purpose flour
- 1/4 cup cane sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sourdough discard
- 6 tablespoons butter melted
Instructions
Prepare the Peaches:
- If using fresh peaches, peel and slice them. You'll need approximately 2 quarts of sliced peaches.
- In a large mixing bowl, combine the sliced peaches with cane sugar, brown sugar, cinnamon, nutmeg, lemon juice, vanilla extract, and arrowroot powder. Toss well to coat the peaches evenly. Make the Topping:
- In another mixing bowl, whisk together the flour, cane sugar, brown sugar, baking powder, and salt until well combined.1/2 cup all-purpose flour, 1/4 cup cane sugar, 1/4 cup brown sugar, 1 teaspoon baking powder, 1/2 teaspoon salt
- Add the sourdough discard and melted butter to the dry ingredients. Stir until the mixture resembles coarse crumbs. Set aside.1/2 cup sourdough discard, 6 tablespoons butter
Assemble the Cobbler:
- Preheat your oven to 425°F (220°C).
- Grease an 8x8 inch baking dish or casserole dish with butter or cooking spray.
- Spread the prepared peach mixture evenly into the bottom of the baking dish.
Add the Topping:
- Using a spoon or your hands, drop dollops of the topping mixture over the peaches until they are completely covered.
Bake the Cobbler:
- Place the assembled cobbler in the preheated oven.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the peach filling is bubbly around the edges.
Serve and Enjoy:
- Remove the cobbler from the oven and let it cool slightly.
- Serve warm with a scoop of ice cream or a dollop of whipped cream for a delightful treat!
